PALATE

A creamy and dry palate that is full of volume and very fresh. This cava is relatively full-bodied and it has very fine effervescence that will melt in your mouth. This cava has a perfect acidity that is very well-balanced. There is a persistent finish that presents crianza ageing notes of toast, ripe fruit jams, and fine pastries. Agustí Torelló Mata Bayanus Brut Nature is a very well-structured wine with a pleasant aftertaste that presents slightly bitter almond sensations.


It is unfortunate that this is a cava that is only offered in the half-bottle size (37.5 cl) because this is an extraordinary cava that should be shared with large groups of people. It you want to make a good impression on someone, this half-bottle of cava will absolutely fits the bill.

    This is a magnificent Grand Reserve Brut Nature cava, Agustí Torelló Mata Bayanus, and it was only produced in the half-bottle size (37.5 cl.). This cava presents impressive aromatic complexities and an extraordinary bouquet of flavors. 

    This cava is crafted from a traditional coupage of Macabeo, Xarel-lo, and Parellada grapes, along with Pinot Noir and Chardonnay, all of which were cultivated from low-yielding and old grapevines in the Penedès, Spain. These grapes were all harvested delicately by hand. There was a very cautious fermentation process that was realized in a traditional manner in stainless steel vats at controlled temperatures held to 57 ºF (14 ºC). The second fermentation process of Bayanus Brut Nature of Macabeo, Xarel-lo, Parellada, Pinot Noir, and Chardonnay was realized in the same half-bottle that this cava remains in today. This crianza ageing lasted for a minimum of 30 months before its disgorgement. After the ageing and disgorgement processes were realized this cava had 0.6 grams of residual sugar per liter. 

    Each half-bottle of Agustí Torelló Mata is uniquely labeled with its specific date of disgorgement.
